Types of Knives


Cook or Chef's Knives

These are general-purpose knives for slicing, mincing, dicing and chopping functions in the kitchen. Lengths are selected based on the chef's preference for comfort. Longer knives may be more flexible but difficult to handle.


Utility Knives

A utility knife is a medium-sized knife useful for various chores such as peeling vegetables and fruits. It may have a plain edge or a serrated blade.


Parer Knives

A parer or paring knife is a short knife with a plain edge suitable for peeling fruits, trimming, shelling prawns, cutting garnishes and other general purposes. They are usually between 6cm and 10cm.


Santoku Knives

Santoku knives are general utility knives for various cutting purposes. They are the Japanese equivalent of a Western chef's knife but lighter. Japanese Santoku knives are light, well-balanced and have blades with good cutting action. See other Japanese knives.


Bread Knives

Bread knives have serrated blades for cutting things which are hard outside and soft inside, like bread without tearing or crushing. Their typical lengths are between 15cm and 25cm.



Choppers are popular with Chinese or Asian chefs for a range of cutting tasks. They are used for chopping, slicing and mincing meats, vegetables, fish. Notice the rectangular blade and the full handle.
