In Taiwan, this condiments is generally known as mushroom sauce, dried bonito sauce or Japanese-style sauce soy sauce. It is made from careful selected pure brewed soy sauce, glutinious rice vinegar, Mirin and dried bonito. Kokumori Dashi Tsuyu, a 2-fold concentration, is best enjoyed diluted about 2 fold. With a salt content of approximately 4%, this sauce can be considered a fairly low-salt seasoning. Aside from being a delicious dipping sauce, Kokumori Dashi Tsuyu is also great for stir-frying, marinating and making soups
